When I add the "Page Number" field, it appears as "Page Numbers" (plural-not bad, just lacks UI consistency)

When I add the "Page Numbers" field, it appears as "Statistics" (confusing for sure... what statistics???)

I guess you meant to say in your 2nd paragraph that when you add "Page count" field it appears as "Statistics". By "appears" you mean the type when you double-click to edit it.

I don't understand what is confusing about seeing Statistics as the type in the editing dialog, when in the second column of the dialog we can select the target for the stats.

As I'm just kind of deducing what you are getting at (what dialogs you are referring to..), please give a more detailed explanation about the problem.
