Debian sid/unstable with *libreoffice* 4:24.2.3~rc1-3, and *gnome-shell* 44.9-1+b1.

    $ libreoffice --version
    LibreOffice 24.2.3.1 420(Build:1)

Editing a DOCX document, and recording the changes, typing *begrüßt* the ß was not recognized, so *begrüt* is there. After that, I wasn’t even able to enter other umlauts like ü. Copy and pasting these characters works.

Steps:
1. Open any docx-file
2. Enable record and show track changes
3. Type "begrüßt" (Works as expected)

Could not reproduce on Ubuntu 22.04 + GNOME 42.9 with:

Version: 24.2.3.2 (X86_64) / LibreOffice Community

CPU threads: 8; OS: Linux 6.5; UI render: default; VCL: gtk3
Locale: en-AU (en_AU.UTF-8); UI: en-US
Calc: CL threaded

Did the package update to 24.2.3.2 (RC2)?
Do you not see the same issue in other apps?
Does it stop happening when you turn Edit > Track Changes > Record off?
Does it happen in Safe Mode?
